Pumpkins and their Seeds are native to the Americas but today China is the largest producer of Pumpkin Seeds.  Pepitas, meaning "little seed" in Spanish, are the shelled and roasted product of pumpkin seeds.  As a common ingredient in Mexican cuisine such as Mole, Pepitas are also popular when roasted and served as a snack.
